  • Type, model: Mechanical dehumidifier, Ambient Water AW400
    • 1,136 to 2,271 L per day depending on temperature and humidity
    • Electrical requirement: 25 kW, 3-phase
    • Reservoir capacity: 1,817 L
    • Dimensions: 2,337 mm wide x 4,597 mm deep x 2311 mm high
    • Mass (reservoir empty): 2,162 kg
Challenges met:
  • Pioneer in using water-from-air in a brewery process
Other interesting information:
  • Beer is 90–95% water
  • Using atmospheric water vapour processing has motivated exploration of new styles and flavours
  • The brewer's director of R & D said that using atmospheric water capture provides a good story and selling point
  • The brewery has branded two pilsners that use water-from-air: CleanEscape #1 and CleanEscape #2
  • Benefits of water-from-air:
    • Purity of the water (total dissolved solids at 7 ppm compared to San Diego's municipal water with 700 ppm
    • Lets brewery add their own ingredients to mimic water tastes from other regions
    • Can brew beers with original tastes
